Nap time today was ruined by the plane that rode right over the house for two to three hours spraying fields! I know this is a job that has to be done but they really should have to call me in advance to see what nap schedules are for the day!
Unfortunately my camera works so slow that each time I clicked the picture the plane was almost out of site had I of been able to get the close up picture we could probably see who was drving the darn thing!

Easter Candy should really be banned! All the chocolate, suckers, sour candy they are all breaking my diet! My kids got candy from the Easter Bunny at our house and at their grandparents house! I even got a bag of YUMMY candy at my parents house Darn that Easter Bunny he’s just a mean mean animal
but boy does he know how to make my tummy yummy! I hope everyone else enjoyed their Easter as well.

I am such an emotional eater! I eat if I’m bored, sad, mad, stressed, and heck I even eat when I’m happy! I also am the type of person that instead of taking the time out of my busy day to fix something to eat I will grab whatever is quickest which just happens to be cans of soda and snacks. I mean they are just sitting there already as a single and waiting to be picked up, I don’t have to do anything but open and insert it into my mouth. If I don’t change my eating habits I’m never going to lose weight or be healthy.
I’m thinking if I cook enough the night before to have leftovers not only to send to work with my fiance but to put into ready to microwave containers then I would grab that instead of the easy to grab cookie.
I should probably get some yogurt for a quick snack. Grab some fruits, and veggies but have them already cut up nicely and placed in a little baggie for a quick grab and go deal.
I love those little already made salads so it couldn’t really hurt to have some of those on hand or just make a salad myself and place it in little containers.
It’s funny how when you sit and think about how easy and quick healthy eating can actually be those “it’s quicker to grab a snack” excuse seem pretty lame!
Here are a few healthy recipe ideas:
No Guilt Banana Pudding
Banana pudding is a great quick dessert. Now with this recipe you can enjoy it without the guilt. All ingredients were substituted with lower fat items.
Ingredients:
1 (8 ounce) package fat free cream cheese
1 (14 ounce) can fat free sweetened condensed milk
1 (5 ounce) package instant sugar free vanilla pudding mix
3 cups cold skim milk
1 teaspoon vanilla extract
1 (8 ounce) container frozen light whipped topping, thawed
4 bananas, sliced
1/2 (12 ounce) package reduced fat vanilla wafers
Directions: |
In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping.
Line the bottom of a 9×13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Allow to chill for at least 3 hours.
Chocolate Crunchy Bars
6 cups cocoa crisp rice cereal
1 1/2 tablespoons margarine
1 1/2 tablespoons reduced-fat peanut butter
1/2 (16 ounce) package large marshmallows
1/3 cup reduced-fat semisweet chocolate morselsPlace rice cereal in a large bowl; set aside. Combine margarine, peanut butter, and marshmallows in a medium pan, cook, stirring constantly, over low heat until marshmallows are melted and mixture is smooth. Pour marshmallow mixture over cereal, stirring until cereal is well coated. Stir in chocolate morsels. Press mixture into a 13 x 9 x 2-inch pan coated with cooking spray using a spatula coated with cooking spray. Let cool completely.Cut into 24 bars. 96 calories per bar; 2.2 grams fat; 0 fiber
Stir-Fried Spicy Chicken Tenders
1 teaspoon sugar
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon cayenne pepper
1 pound boneless, skinless chicken breast tenders, cut into 2-inch pieces (see Variation)
1 tablespoon canola oil
1 16-ounce package frozen bell pepper and onion mix
1. Combine sugar, paprika, salt, pepper and cayenne in a medium bowl. Add chicken and toss to coat. Cover and refrigerate for 15 minutes or overnight.
2. Heat oil in a large nonstick skillet over high heat. Add pepper-and-onion mix and cook, stirring occasionally, until the vegetables are soft, 5 to 7 minutes. Add the spice-rubbed chicken and cook, stirring, until no longer pink in the center, 3 to 5 minutes. Serve hot.Variation: Make Stir-Fried Spicy Beef by using 1 pound of stir-fry beef or thinly sliced top round steak instead of chicken in this dish. |
